Bacon Buffalo Chicken Tachos

I am feeling very refreshed this morning after a nice, relaxing weekend. Do you ever just crave ordinary weekends? I often have an Energizer Bunny mentality and “keep going and going and going,” so it felt good to move at a much slower pace on Saturday.

The top item on my “to do” list this weekend was visit a farmers market. I have been guilty of not visiting any of the incredible ones the Indianapolis area has to offer, so William and I biked to the Garfield Park Farmers Market.

Garfield Park is just a little south of Indianapolis, not far from Fountain Square. The park is huge and absolutely beautiful. They also have a beautiful conservatory with an incredible garden.

The farmers market is just past that. They had about 30 vendors, ranging from local farmers to local artisans. We picked up some beet hummus (I like that it’s PINK!) and peach Sriracha jam.

Have you heard of “Tachos”? Essentially, they’re nachos, but tater tots replace the tortilla chips. I’ve seen them popping up more and more lately, and I have been tempted to create my own version.

Since today is Bacon Lover’s Day AND the home opener for the Colts preseason game, I decided to experiment with a bacon buffalo chicken version. Wow. Talk about game day comfort food at its finest.

I liked it a lot more than I thought I would. Sometimes my diet is a victim of my creations. But you only live once, right?

Bacon Buffalo Chicken Tachos
Ingredients

  • 1 (32-ounce) bag frozen tater tots
  • 2 cups shredded chicken (I just used all white meat from one rotisserie chicken)
  • 1 cup Buffalo wing sauce
  • 1/2 cup Challenge butter, melted
  • 1/2 teaspoon garlic powder
  • 1 cup cheddar cheese
  • 1/4 cup blue cheese dressing (can be replaced with ranch or omitted completely if you don’t like blue cheese)
  • 5 slices bacon, chopped
  • 1/4 cup blue cheese crumbles
  • Abut 6 green onions, chopped (add more or less depending on taste preference)

Directions

  1. Preheat oven to 425 degrees Fahrenheit and prepare baking sheet by lining it with aluminum foil and spraying it with nonstick spray.
  2. Spread entire bag of tater tots on baking sheet in single layer and cook for 20 to 25 minutes.
  3. While tater tots are cooking, combine shredded chicken with buffalo sauce, butter, and garlic powder.
  4. Remove tater tots from oven and place in cast iron skillet, casserole dish or pie dish.
  5. Cover with shredded chicken and cheddar cheese. Place back in oven until cheese is melted, or about 5 minutes.
  6. Remove from oven and top with blue cheese dressing, bacon, blue cheese crumbles and green onion.

Breakfast Pizza Wreath




There's nothing more special than Christmas morning. I know a lot of people who like to wake up early to open presents, but that's never been the case with me. It's the one day of the year when I know I don't have anywhere to be, and I can stay under my heating blanket for as long as I want.

Since there's no rush, there's plenty of time to create fun Christmas morning breakfast. There are a lot of tasty breakfast options, but I try to stick with the holiday theme as much as possible.

The Christmas morning recipe I'm featuring this year is a Breakfast Pizza Wreath. I'm not sure why I didn't think of this sooner. I mean, pizzas already kind of look like wreaths when you're hungry enough. All I had to do was use a circle cookie cutter to take out the center. It doesn't get easier than that.



I also created a bow out of red peppers, and I really think that completed the look. Another unnecessary but cool idea is to add a little dill around the edges. I recently decided that dill is the most underrated, festive-looking herb.

Of course, you can add whatever toppings you please, just like you would with a regular pizza. I see a lot of people commenting on my recipe video that gravy would be a good substitute for pesto as well.



Breakfast Pizza Wreath
Ingredients
  • 1 pizza crust (Wewalka Bistro Pizza Dough is my favorite)
  • 6 eggs
  • 1/2 pound bacon
  • 1/2 pound breakfast sausage
  • 1/4 cup pesto
  • 2 cups mozzarella cheese
  • 1/2 cup parmesan cheese
  • 1 red bell pepper
  • Dill, if desired
Directions
  1. Heat oven to 400 degrees Fahrenheit; unroll pizza dough and pre-bake for about 8 minutes or until lightly browned
  2. Cook scrambled eggs, bacon, and sausage; set aside
  3. Spoon pesto over pizza crust, and top with mozzarella cheese, scrambled eggs, bacon, and sausage.
  4. Top with parmesan cheese.
  5. Bake an additional 6 to 9 minutes or until crust is golden brown and cheese is melted.
  6. Cut end of red bell pepper so it looks like a boy, and add to pizza with dill to make it look like a festive wreath.

Bacon, Egg & Cheese Breakfast Bombs

Do you ever think about how much time you spend worrying about what other people think? I hate to admit it, but it consumes my thoughts for hours every single week.

For example, this week I'm doing a segment on FOX59 about Easter breakfast. I changed my mind about what I was going to make probably 10 times because I was so worried about other people's reactions to it. My parents can attest to this because I'm sure I annoyed the heck out of them asking for their opinion. "Is this unoriginal?" "Do enough people like this?" "Is this festive enough?" "Does this sound good to you?"

I want every recipe I share on my blog to do well, of course. But sometimes this leads me to worry too much about other people's reactions. I forget that the reason people started visiting my blog is to read about my ideas and my opinions.

I'm not going to pretend that I have the magic secret to stop worrying about what other's think, however, I hope this post helps you become more aware of when and why you do it. That's the first step in stopping.



All that being said, I really am excited to share this recipe with you that will be perfect for breakfast or brunch on Easter. I didn't want to make anything sweet because if you're like me you've already eaten at least 2 Reese's Peanut Butter Cup eggs and a handful of jellybeans by the time brunch rolls around.

So I made Bacon, Egg & Cheese Breakfast Bombs! I love this dish because it's unlike anything else I've ever made for breakfast. Family members of all ages will enjoy biting into one of the breakfast bombs. Also, you can easily prep this dish the night before so all you have to do on Easter morning is brush it with Challenge butter and stick it in the oven.

When I make this for Easter, I plan to make it more festive by inserting cupcake toppers into the buns. I also thought about using some Challenge cream cheese to pipe crosses onto the buns so they look like hot cross buns.

Bacon, Egg & Cheese Breakfast Bombs
Yield: Makes 16 servings
Ingredients
  • 6 eggs
  • 1/4 cup milk
  • 1 Tablespoon Challenge butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tubes refrigerated biscuit dough (16.3 ounce)
  • 1/2 cup cheddar cheese
  • 6 slices cooked bacon, cut into small pieces
  • 1 jalapeno, finely sliced (optional)
  • 4 Tablespoons Challenge butter, melted
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
Directions
  1. Beat eggs and milk together in large bowl until well-blended.
  2. Heat butter in large nonstick skillet over medium heat until melted and add eggs to skillet.
  3. As soon as the edges begin to set, pull the eggs across the pan with a spatula. Continue until no liquid egg remains.
  4. Season with salt and pepper and set aside.
  5. Preheat oven to 350 degrees Fahrenheit. Prepare 9 inch pie pan with nonstick spray and set aside.
  6. Remove biscuit dough from tube and flatten and stretch each biscuit until it's about 3 inches in diameter.
  7. Sprinkle 1 Tablespoon cheese, 1 Tablespoon scrambled eggs, 1 Tablespoon bacon, and 1 jalapeno slice over biscuit dough.
  8. Pull the edges of the dough together and seal with your fingers. Place into prepared pie pan.
  9. Repeat process until all dough is in pie pan.
  10. Combine butter, garlic powder, and parsley. Brush butter mixture over dough with pastry brush.
  11. Bake for 30 to 35 minutes or until tops are golden brown.

Chocolate peanut butter bacon whoopie pies


Chocolate peanut butter bacon whoopie pies
Yield: Makes about 10 whoopie pies

Ingredients
For the chocolate whoopie pies
  • 1 2/3 cups all-purpose flour (208 grams)
  • 2/3 cup Dutch-process cocoa (80 grams)
  • 1 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 cup brown sugar (207 grams)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup milk
For the peanut butter cream filling
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 cup creamy peanut butter (270 grams)
  • 2 cups powdered confectioners’ sugar (252 grams)
  • 2 Tablespoons milk

Directions
For the chocolate whoopie pies
  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a medium bowl, combine flour, cocoa, baking soda, and salt. Set aside.
  3. In a large bowl, cream butter and sugar with an electronic mixer for about 2 minutes. 
  4. Add egg and vanilla and beat for two more minutes. 
  5. Add half of the flour mixture and add half of the milk and beat on low until incorporated. Add the rest of the flour mixture and the rest of the milk and beat until just combined.
  6. Drop rounded tablespoon-sized spoonfuls of batter on baking sheet about two inches apart. Bake for about 10-12 minutes, or until a toothpick comes out clean. Remove from oven and cool.
  7. Once whoopie pies are cooled, add a big spoonful of frosting onto the flat side of one cookie then top with another cookie. Repeat with remaining frosting and cookies.
For the peanut butter cream filling
  1. Beat butter and peanut butter until smooth, or about two minutes.
  2. Slowly mix in sugar. Once sugar is fully incorporated, add milk.
  3. Beat peanut butter cream for 2 more minutes or until light and fluffy.
  4. Add candied bacon to sides of whoopie pies as a garnish.

Candied bacon


Candied bacon
Ingredients
  • 1 pound of thick cut bacon (about 11 slices per pound)
  • 1/3 cup brown sugar
  • 2 Tablespoons maple syrup
Directions
  1. Preheat oven to 350 degrees Fahrenheit. Cover baking sheet with aluminum foil. Spray cooling rack with nonstick cooking spray and place cooling rack on top of baking sheet. Set aside.
  2. Combine brown sugar and maple syrup in bowl. Dredge one piece of bacon in sugar mixture and lay flat on cooling rack. Repeat process, laying bacon side by side, until there is no room on cooling rack. Do not overlap the pieces of bacon. Sprinkle a little more brown sugar on top of each piece of bacon.
  3. Bake bacon for about 15 – 20 minutes. You will want to start checking on bacon to make sure it isn’t burning at the 15-minute mark. Finished bacon will be dark around the edges. Transfer bacon to plate and let cool.
